6 small yams (sweet potatoes) or a large butternut, cleaned and 1" cubed.
4 Pasilla pepper, cleaned and large chop (use green peppers you northerners)
2 calabacita 1/2" slices quartered, (1 zucchini for the northerners)
Couple chayotes diced (maybe, fun extra)
2 cans tomatoes, or a bunch of fresh tomatoes chopped.
2 cans beans. black, pinto, kidney, whatever, drained and rinsed or 2 cups fresh
4 Serrano peppers, cleaned and chopped
2 Jalapeno peppers, cleaned and chopped
2 onions, large chop (fine if you don't want chunks of onion)
4 carrots, cleaned and chopped
4 or 12 cloves of garlic or garlic powder if fresh not on the menu
1 tablespoon garlic powder or a tsp or two of fresh
1 tablespoon chili powder
1 tablespoon italian seasoning.
Little water in pan, brown onion, hot peppers and carrots
after 5 minutes or so add the potatoes
Maybe 15 minutes or until the potatoes are getting ready to no longer be hard.
Add everything else except the beans, another 5-10 minutes here depending on how hard the zucchini are.
If you plan on eating at this time add the beans for maybe 5 minutes, if you are not going to eat now (give the flavors a night to marinate) throw the beans in after you turn the heat off.
I like to throw in some lime juice before eating.
Sometimes Sriracha sauce if the spice didn't make it to where it needs to be.
