I tell you what we made some ice cream with coconut milk, it was excellent, we had full control of the flavor and what went in it. Yeah it took a while to make, but who cares, it is not like I was churning it myself, the machine did the work! Make it and stick it in the freezer so you can enjoy later.
Is eating good food easy? No, it takes some work.
I enjoy the time in the kitchen, I find the knife work and the act of cooking as therapy, it relaxes me and honestly the food tastes better

Grass fed pork chops, they were phenomenal!
Tonight we had grilled salmon fillets and spaghetti squash with crushed tomatoes.
I made my egg muffins this week, by beating the whole eggs and I put the veggies in raw.
Excellent! They were fluffy, quiche like, and the veggies were cooked enough and added more texture.
I am really enjoying myself, and am walking more now that it is cooler and school is in session. Get a morning walk and lunchtime and even some after dinner walking. Maybe I will even weigh myself tomorrow morning!
